  • Mini Mango Muffins

The BakerMama bakes mini muffins that are slightly sweet, super moist, and full of mango marvelousness!

Ingredients

    • 3/4cup light brown sugar
    • 1/3 cup milk
    • 1/4cup vegetable oil
    • 1 large egg
    • 1teaspoon vanilla
    • 1-1/2 cups Gold Medal™ whole wheat flour
    • 2-1/2 teaspoons baking powder
    • 1/2 teaspoon salt
    • 1teaspoon cinnamon
    • 1-1/2 cups chopped fresh mango (about 2 medium mangos)
    • 2tablespoons light brown sugar

Directions

    Preheat over to 400°F. Grease 24 mini muffins cups with cooking spray or place paper muffin liners in each one. Set aside.

    In a large bowl, whisk together brown sugar, milk, oil, egg and vanilla. Stir in flour, baking powder, salt and cinnamon just until flour is moistened. Fold in chopped mango.

    Divide batter evenly among prepared muffin cups; sprinkle each with a pinch of light brown sugar. Bake 15 minutes or until toothpick inserted in center comes out clean. Let cool in pan at least 20 minutes before removing.
